After decades of round trips to the European gastronomic highlights and tasting the absolute best olive oils in the world, I have now chosen to offer you insight into my knowledge through travel, courses and of course the opportunity to purchase carefully selected olive oils.
Catherine Fogel has just completed the three-year education as a professional olive oil taste judge via the Italian organization ONAOO. That means she can make coupage (compose the different varieties so that the oil achieves the right balance), identify and classify olive oils. It is the only professional education in the world, and there are only 36 people worldwide who have completed the education and obtained the title. We can say with some pride that our assortment of extra virgin olive oil has been carefully selected based on Catherine's great knowledge and professionalism.
